A top Texas official denounced school districts that have scaled back on serving meat one day a week, accusing them of succumbing to a “carefully orchestrated campaign” to force Americans to become vegetarians. Texas Agriculture Commissioner Todd Staples this week criticized districts that have adopted “meatless Monday” policies.

My understanding is that they are trying to save money, rather than “push” a lifestyle. However, following the money is a good way to find any particular politician’s motivation. I would have guessed that conservatives would be optimistic about school lunch programs that save money, but again, I’m not paying Mr. Staples.
