I had this epiphafood years ago. The reason to throw away the closed pistachios is because they are often rotten inside. Pistachios open when they are cooked as the nut expands from the heat and force the shell open. Unripe, small pistachios don’t expand enough to force open the shell when cooked. So after the extra work of opening them, you get a sour bitter nut inside. So sad.
